Anyone partial to a bit of cheese? and have some regulars in there fridge.

I like the Cruncher and Crackler Cheddars especially Sainsburys Barber Cruncher and some of the softer slightly pungent, Cavern Aged Cheddars. Along with Double Gloucester and Chives, Manchego and Edam

Blue cheeses Dorset Blue Vinney and a crumbly Gorgonzola

Cheeses for melting Monterey Jack and Jarlsberg

Love smoked cheese, now the cold nights are coming, I cold smoke my own Cheeses and butter. I just get a good couple of blocks of 500g Mature cheddars or a block of Jarlsberg from the deli, cold smoke it for 4 hours with different wood dusts and leave it for 2 weeks in the fridge for the smoke to settle and permeate through the cheese. Tastes much better than the regular shop bought smoked cheeses.

Or Worcester Gold. A lovely creamy cheddar type cheese. Very tasty.

Got a soft spot for Talaggio here as well. Been recommended to try it melted with potatoes. I’ve got to give that a try

Had my first raclette at the weekend, used raclette cheese.

Though the best one for melting over spuds IMO is morbier. Just right

I’m partial to a good cheddar and second Yarg

However, Beaufort I love too

Isle of Mull Cheddar is lovely.

I think it's available in individual truckles at Tesco's - certainly used to be.

Made with unpasteurised milk. Paler colour than most cheddars with a blue vein and has a slightly nutty flavour.

I have a bullet smoker which in the summer, I do ribs, brisket, pulled pork, beer can chicken etc on. Too cold to lo & slo cook for 8 hours + now, but the cold nights are ideal for cold smoking cheese, butter, salmon and your own cured bacon. The difference between home cured bacon and supermarket bacon is night and day. As for all cold and hot smoking different woods provide different finished flavours to the smoked meats, dairy & fish.
